Cypress Creek Reserve Rum Distillery has been in operation for eight years. Owner David Watson took us on a little tour and explained his distilling process. Besides regular rum, they also make a vanilla flavor and one that is aged in whiskey barrels for at least a year that is very smooth. They also offer vanilla for cooking.

David Watson has created a tasting bar from locally sourced cypress and built a tree top platform that can be rented for small parties and weddings.They are open for tastings and tours Tuesday through Saturday, 11:30-5:30 p.m. Groups larger than 8 should call  (512) 847-6874 for an appointment.

If you are visiting Wimberley, Texas and tastings are your thing, there are also several local wineries and micro breweries in the area.
